Ingredients

  • 1 sheet of puff pastry thawed
  • 4 oz goat cheese softened
  • 2 large yellow onions thinly sliced
  • 1 tbsp butter or olive oil for vegan version
  • 1 tsp fresh thyme leaves or rosemary
  • Salt and pepper to taste

Instructions

  • Preheat the oven to 375°F (190°C).
  • Caramelize the onions: In a skillet, melt the butter over medium heat. Add the thinly sliced onions and cook slowly for about 30-40 minutes, stirring occasionally, until deeply golden and caramelized. Season with salt and pepper to taste.
  • Prepare the puff pastry: Roll out the thawed puff pastry on a lightly floured surface. Cut the pastry into small squares or circles, about 2 inches in size.
  • Assemble the bites: Place a dollop of softened goat cheese in the center of each pastry square. Top with a spoonful of the caramelized onions and sprinkle with fresh thyme.
  • Bake: Place the assembled bites on a parchment-lined baking sheet and bake in the preheated oven for 12-15 minutes, or until the pastry is golden brown and puffed.
  • Serve: Garnish with extra thyme or a drizzle of honey, if desired. Serve warm.
