Ingredients

  • 1.5 lbs asparagus ends trimmed
  • 1 small onion thinly sliced
  • 3 garlic cloves minced
  • 1/2 cup vegetable or chicken broth
  • 8 oz cream cheese room temp
  • 1/2 cup grated parmesan
  • 1 cup shredded mozzarella/asiago mix
  • 1 tsp Italian seasoning
  • Salt & pepper
  • Red pepper flakes optional
  • Fresh parsley for garnish

Instructions

  • Preheat your oven to 375°F (190°C) and lightly grease a medium baking dish. This helps avoid sticking and adds to the crisp factor later on.
  • Blanch the asparagus in boiling water for 2 minutes, then transfer to an ice bath. This keeps them vibrant and prevents mushiness after baking.
  • In a skillet, sauté sliced onions with a drizzle of olive oil until soft. Add garlic, cook 1 more minute, then stir in broth and cream cheese until smooth and creamy.
  • Stir in Italian seasoning, salt, pepper, and half the parmesan. Fold in the asparagus gently so it’s coated but not broken. Add chili flakes if you want a bit of heat.
  • Pour the mixture into your baking dish, top with shredded cheese and remaining parmesan. Bake uncovered for 20–25 minutes until golden and bubbly.
  • Broil for 2–3 minutes at the end to crisp up the top. Let it cool for 5 minutes. Garnish with parsley and serve warm!
