Chicken Meatballs are a versatile dish enjoyed around the world. Combining lean ground chicken with herbs, spices, and breadcrumbs, they are light, flavorful, and easy to prepare. Meatballs have been a staple in many cultures, from Italy’s polpette to the Middle Eastern kofta. While traditional meatballs are often made with beef or pork, chicken provides a leaner alternative that absorbs flavors beautifully.

Instructions
Prepare the Meatball Mixture: In a large bowl, combine the ground chicken, breadcrumbs, egg, onion, garlic, parsley, cumin, paprika, salt, and pepper. Mix until everything is well incorporated.
Shape the Meatballs: Using your hands or a small scoop, form the mixture into small balls, about the size of a walnut. Set them aside on a plate.
Cook the Meatballs: Heat olive oil in a large skillet over medium heat. Cook the meatballs in batches, turning them occasionally, until they are browned on all sides and cooked through (about 12-15 minutes).
Prepare the Salad: While the meatballs are cooking, combine the chopped tomatoes, cucumbers, and chickpeas in a bowl. Drizzle with olive oil and lemon juice, and season with salt and pepper. Toss to coat.
Serve: Plate the meatballs with a side of the tomato, cucumber, and chickpea salad. Add a handful of nacho chips on the side for a crunchy finish.
