Chicken Meatballs

  • 1 lb 450g ground chicken
  • 1/2 cup breadcrumbs
  • 1 egg
  • 1 small onion finely chopped
  • 2 garlic cloves minced
  • 1 tbsp fresh parsley chopped
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • Olive oil for cooking

Salad

  • 2 medium tomatoes chopped
  • 1 cucumber chopped
  • 1 can 15 oz chickpeas, drained and rinsed
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  • Prepare the Meatball Mixture: In a large bowl, combine the ground chicken, breadcrumbs, egg, onion, garlic, parsley, cumin, paprika, salt, and pepper. Mix until everything is well incorporated.
  • Shape the Meatballs: Using your hands or a small scoop, form the mixture into small balls, about the size of a walnut. Set them aside on a plate.
  • Cook the Meatballs: Heat olive oil in a large skillet over medium heat. Cook the meatballs in batches, turning them occasionally, until they are browned on all sides and cooked through (about 12-15 minutes).
  • Prepare the Salad: While the meatballs are cooking, combine the chopped tomatoes, cucumbers, and chickpeas in a bowl. Drizzle with olive oil and lemon juice, and season with salt and pepper. Toss to coat.
  • Serve: Plate the meatballs with a side of the tomato, cucumber, and chickpea salad. Add a handful of nacho chips on the side for a crunchy finish.
