Ingredients

  • 2 boneless skinless chicken breasts, cooked and thinly sliced
  • 4 large tortilla wraps
  • 1 cup shredded lettuce
  • 1 large red bell pepper diced
  • 1 avocado cut to small cubes
  • 1/2 cup sliced red onion
  • 1/2 cup sliced bell peppers any color you prefer
  • 1/4 cup sliced black olives optional
  • 1/4 cup chopped fresh cilantro optional
  • 1/2 cup shredded cheese cheddar, Monterey Jack, or your choice
  • 1/4 cup mayonnaise
  • 2 tablespoons plain Greek yogurt or sour cream
  • 1 tablespoon lime juice
  • Salt and pepper to taste

Instructions

  • In a small bowl, mix together mayonnaise, Greek yogurt or sour cream, lime juice, salt, and pepper to create a creamy sauce. Set aside.
  • Lay out the tortilla wraps on a clean surface. Spread a thin layer of the creamy sauce onto each tortilla. Place a handful of shredded lettuce on each tortilla, followed by a few slices of cooked chicken.
  • Top with diced bell peppers, avocado cubes, sliced red onion, sliced bell peppers, black olives (if desired), and chopped cilantro (if desired).
  • Sprinkle shredded cheese evenly over the fillings. Fold in the sides of each tortilla and then roll them up tightly, creating a wrap.
  • If desired, you can lightly heat the wraps in a skillet or grill pan over medium heat for a few minutes to make them warm and toasty. This step is optional.
  • Cut the wraps diagonally into halves or leave them whole if you prefer. Serve the chicken wraps immediately and enjoy!
