  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1 cup cherry tomatoes halved
  • 1/4 cup fresh basil leaves chopped
  • Salt and pepper to taste
  • Lemon wedges for serving

Instructions

  • Prepare the Halibut: Pat the halibut fillets dry with a paper towel and season both sides generously with salt and pepper.
  • Heat the Pan: In a large skillet, heat the olive oil over medium heat until shimmering.
  • Cook the Garlic: Add the minced garlic to the pan and sauté for 1-2 minutes until fragrant, being careful not to burn it.
  • Cook the Halibut: Add the halibut fillets to the pan, skin-side down if applicable. Cook for 4-5 minutes on the first side until the edges begin to brown and crisp.
  • Flip and Add Tomatoes: Gently flip the fillets and add the cherry tomatoes to the pan. Cook for another 3-4 minutes until the fish is cooked through and the tomatoes begin to soften and release their juices.
  • Add Basil: Sprinkle the chopped basil over the fish and tomatoes during the last minute of cooking, allowing the heat to release the basil’s aroma.
  • Serve: Transfer the halibut fillets to plates, spoon the garlic, tomatoes, and basil mixture over the top, and serve with lemon wedges for squeezing over the fish.
