  • 125 ml ½ cup dry white wine

  • 2 cloves garlic minced
  • 30 g 2 tbsp butter
  • 2 tbsp olive oil
  • 50 g 1.8 oz Parmesan cheese, grated
  • Salt and pepper to taste

Instructions

  • Start by warming your chicken or seafood stock in a saucepan over low heat. Add a pinch of saffron threads to infuse the stock with vibrant color and aromatic saffron flavor. Keep it warm throughout cooking to ensure the risotto absorbs maximum flavor.
  • In a large pan, heat olive oil and a tablespoon of butter over medium heat. Sauté finely chopped onion or shallot until translucent and fragrant. Add minced garlic and cook for another minute, just until fragrant but not burned. This builds the aromatic base of your risotto.
  • Stir in the Arborio rice and cook for 2-3 minutes, ensuring each grain is coated with butter and oil. This step toasts the rice slightly, enhancing its flavor. Gradually pour in about half a cup of dry white wine, stirring constantly until the wine mostly evaporates, adding luminance and acidity.
  • Begin adding the warm saffron-infused stock one ladle at a time. Stir continuously, allowing each addition to be absorbed before adding the next. This slow process creates the creamy texture and rich flavor characteristic of authentic risotto. After about 15 minutes, the rice should be just tender but still slightly al dente.
  • Meanwhile, in a separate pan, sauté the shrimp in olive oil or butter until pink and cooked through, about 2-3 minutes per side. Season lightly with salt, pepper, and a squeeze of lemon for brightness. Add the cooked shrimp to the finished risotto, gently folding them in for maximum flavor and succulence.
  • Finish with grated Parmesan, a zest or splash of lemon juice, and freshly chopped herbs such as parsley. Adjust seasoning with salt and pepper. Serve immediately, garnished with optional pistachios, peas, or asparagus for added texture and color. Enjoy this silky, golden, aromatic masterpiece!
