Ingredients

  • 2 ripe avocados
  • 1 can about 5 ounces of canned tuna
  • 1/4 cup mayonnaise
  • 1 tbsp Dijon mustard
  • 1 tbsp lemon juice
  • 2 tbsp finely chopped red onion
  • 2 tbsp chopped fresh cilantro or parsley
  • Salt and pepper
  • Olives and capberries for garnish

Instructions

  • Cut the avocados in half and remove the pits. Scoop out a bit of flesh from each half to create a larger cavity for the tuna cream. Be careful not to pierce through the avocado skin.
  • In a mixing bowl, combine the drained tuna, mayonnaise, Dijon mustard, lemon juice, red onion, and chopped cilantro or parsley.
  • Mix the ingredients thoroughly until well combined. Season with salt and pepper to taste.
  • Spoon the tuna cream mixture into the cavities of the avocado halves, evenly distributing the filling among them.
  • Garnish the stuffed avocados with additional chopped cilantro or parsley if desired. You can also add a green olives onion rings and capberries on top of each avocado.
  • Arrange the stuffed avocados on a serving platter and serve immediately.
