  • 1/2 cup milk
  • 1 egg
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 tbsp butter for cooking the blinis
  • 1 cup cream cheese
  • 1 cup cherry tomatoes
  • 1 tbsp olive oil
  • 2 tbsp capers

Instructions

  • Prepare the blini batter: In a mixing bowl, whisk together the flour, baking powder, and salt. In a separate bowl, whisk the egg and milk. Slowly add the wet ingredients to the dry ingredients, stirring until combined and smooth.
  • Cook the blinis: Heat a non-stick skillet over medium heat and add a small amount of butter. Pour a tablespoon of batter into the pan to form small circles. Cook for 1-2 minutes per side, or until golden brown. Repeat with the remaining batter.
  • Roast the cherry tomatoes: Preheat the oven to 375°F (190°C). Toss the cherry tomatoes with olive oil and spread them on a baking sheet. Roast for 20-25 minutes, until the tomatoes have softened and slightly caramelized.
  • Assemble the blinis: Spread a generous layer of cream cheese on each blini. Top with 2-3 roasted cherry tomatoes, and scatter a few capers on top.
  • Garnish and serve: Optionally, sprinkle with fresh herbs like dill or parsley for added color and flavor. Serve immediately.
