Boneless Skinless Chicken Breasts: These are your clean slate; they soak up the cumin and chili powder. Look for plump, pink meat and avoid anything with "woody" white fibers which will turn tough during the simmer.
Cannellini or Great Northern Beans: These are the backbone. Cannellini are larger and creamier, while Great Northern are slightly more delicate. Always rinse them thoroughly to remove the metallic-tasting canning liquid.
Mild Green Chilies: These provide the "soul" without the "burn." They should smell earthy and slightly charred. Avoid the "extra hot" versions unless you want to lose the delicate flavor of the white beans.
