Ingredients

  • 1 cup oats
  • 2 cups milk or plant-based milk
  • 2 apples peeled, cored, and chopped
  • ¼ cup dried cranberries
  • ½ cup granola
  • 1 tsp cinnamon
  • 1 tbsp maple syrup optional

Instructions

  • Preheat your oven to 350°F (175°C).
  • Peel, core, and chop the apples into bite-sized pieces. Spread them on a baking tray and sprinkle with cinnamon. Bake for 20-25 minutes until soft and caramelized.
  • While the apples bake, cook the oats. In a saucepan, combine oats and milk over medium heat. Stir frequently until the oats absorb the liquid and become creamy, about 10 minutes.
  • Stir the cranberries into the porridge and cook for another 2 minutes.
  • Remove the baked apples from the oven and gently fold them into the porridge.
  • Serve the porridge in bowls, topping each serving with granola and an optional drizzle of maple syrup. Enjoy warm.
