  • 1 onion chopped
  • 2 cloves of garlic minced
  • 1 pound carrots peeled and chopped
  • 4 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground coriander
  • Salt and pepper to taste

Instructions

  • Heat the olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, and sauté until the onion becomes translucent and fragrant.
  • Add the chopped carrots to the pot and stir to combine with the onion and garlic. Cook for a few minutes, allowing the flavors to meld together.
  • Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to low, cover the pot, and simmer for about 20-25 minutes or until the carrots are tender.
  • Using an immersion blender or a regular blender, puree the soup until smooth and creamy. Be cautious when blending hot liquids; if using a regular blender, blend in batches and vent the blender lid to avoid pressure buildup.
  • Return the soup to the pot (if using a regular blender), and stir in the ground cumin, ground ginger, and ground coriander. Season with salt and pepper to taste. Simmer for an additional 5 minutes to allow the flavors to meld together.
  • Serve the carrot soup hot, garnished with fresh herbs, a dollop of sour cream, or croutons if desired.
