Ingredients

  • 4 cube steaks about 6 oz each
  • 2 cups all-purpose flour
  • 2 large eggs
  • 1 cup buttermilk or regular milk
  • 1 tsp salt
  • 1 tsp black pepper
  • 1/2 tsp paprika optional
  • 1/4 tsp cayenne pepper optional
  • 1/2 cup vegetable oil for frying

For mashed Potatoes

  • 4 large russet potatoes
  • 1/4 cup butter
  • 1/2 cup milk or cream
  • Salt and pepper

For Gravy

  • 2 tbsp flour
  • 2 cups whole milk

Instructions

  • Prepare the steaks: Tenderize the cube steaks by pounding them lightly if needed. Season the steaks with salt, pepper, and paprika or cayenne pepper, if using.
  • Prepare the breading: In one shallow bowl, place the flour. In another shallow bowl, whisk together the eggs and buttermilk.
  • Bread the steaks: Dip each steak into the flour, coating both sides, then into the egg mixture, and finally back into the flour for a second coating.
  • Heat the oil: In a large skillet, heat the oil over medium-high heat. Once the oil is hot, fry the steaks in batches, about 3-4 minutes per side, until golden brown and crispy. Transfer to a paper towel-lined plate to drain.
  • Make the mashed potatoes: Boil the potatoes in salted water until tender, about 15-20 minutes. Drain, mash with butter and milk or cream, and season with salt and pepper to taste.
  • Make the gravy: After frying the steaks, pour off excess oil, leaving about 2 tablespoons in the pan. Add the flour and cook, stirring constantly, for 1-2 minutes. Slowly whisk in the milk, stirring until thickened. Season with salt and pepper to taste.
  • Serve: Plate the chicken fried steaks with a generous scoop of mashed potatoes. Pour the gravy over the steaks and potatoes. Serve hot with your preferred side dishes.
