Ingredients

  • 200 g Chicken breast
  • 100 g Panko breadcrumbs
  • 50 g Flour
  • 1 Egg
  • 2 tbsp Vegetable oil
  • 1 large Onion
  • 3 cloves Garlic
  • 1 inch Ginger
  • 2 tbsp Curry powder
  • 2 large Potatoes
  • 2 large Carrots
  • 300 ml Chicken stock
  • 200 ml Coconut milk
  • 1 tbsp Soy sauce
  • 1 tbsp Honey
  • 1, Apple peeled
  • 2 tbsp Butter
  • 1 tsp Cornstarch
  • 200 g Rice

Instructions

  • Prepare the chicken: Slice chicken breasts into manageable cutlets. Season lightly with salt and pepper. Set up a breading station with flour, beaten egg, and panko breadcrumbs. Coat each piece first in flour, dip in egg, then coat in panko until fully covered
  • Fry the chicken: Heat vegetable oil in a deep pan over medium heat. Fry the breaded chicken until golden brown and cooked through, about 4-5 minutes per side. Drain on paper towels. Cut into strips or serve whole
  • Make the curry sauce: In a large pot, sauté chopped onion, minced garlic, and grated ginger in butter until fragrant and soft. Stir in curry powder, tomato paste, and cook for a minute to release flavors. Add diced potatoes and carrots, cook for a few minutes
  • Simmer the sauce: Pour in chicken stock and coconut milk. Bring to a gentle simmer. Add soy sauce, honey, and a chopped apple for a touch of sweetness. Continue to simmer until vegetables are tender and sauce thickens slightly, about 15 minutes. Thicken with a slurry of cornstarch if needed
  • Serve: Plate the crispy chicken on a bed of rice. Ladle the rich, rustic curry sauce over the top. Garnish with fresh herbs if desired. The result is a crispy, tender, and aromatic dish that’s rustic, indulgent, and satisfying.
