Ingredients

  • 2/3 cup mayonnaise or salad dressing
  • 2 tablespoons milk
  • 2 tablespoons prepared mustard
  • 1 tablespoon vinegar
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 2 medium potatoes
  • 1 1/2 cups finely shredded cabbage
  • 1 12- ounce can corned beef chilled and cubed

Instructions

  • Start by boiling the potatoes until they are fork-tender. Peel them and then cut them into cubes. Once the potatoes are cooked and cooled, set them aside to allow them to reach room temperature before adding to the salad.
  • In a separate bowl, combine the mayonnaise, milk, prepared mustard, vinegar, sugar, and salt. Whisk together until smooth and creamy. Taste and adjust the seasoning, adding more salt or vinegar as needed to balance the flavors.
  • In a large mixing bowl, add the cooled potatoes, finely shredded cabbage, and cubed corned beef. Pour the dressing over the ingredients and toss gently to coat everything evenly. Make sure all the ingredients are well combined.
  • Cover the salad with plastic wrap and refrigerate for at least 30 minutes before serving. This allows the flavors to meld together and enhances the overall taste. For an extra burst of flavor, you can garnish with fresh parsley or chives right before serving.
