Ingredients

For the salad

  • 2 cups green cabbage finely shredded
  • 4 spring onions sliced
  • 1 cucumber diced
  • 1/4 cup chives chopped

For the dressing

  • 1/2 cup fresh basil leaves
  • 1/2 cup fresh spinach leaves
  • 2 tablespoons lemon juice
  • 2 tablespoons rice vinegar
  • 1 tablespoon soy sauce
  • 1/4 cup nuts eg. cashews
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

Prepare the salad

  • Finely shred the cabbage and place it in a large salad bowl.
  • Slice the spring onions and add them to the bowl.
  • Dice the cucumber and add it to the mix.
  • Chop the chives and sprinkle them over the vegetables.

Make the dressing

  • In a blender, combine the basil leaves, spinach leaves, lemon juice, rice vinegar, soy sauce, and optional nuts.
  • Blend until smooth, gradually adding the olive oil to achieve a creamy consistency.
  • Season with salt and pepper to taste.
