Ingredients

  • 1 lb ground beef
  • 1 cup white rice uncooked
  • 1 can 14 oz chopped tomatoes
  • 1 cup corn kernels fresh, canned, or frozen
  • 1 red bell pepper diced
  • 1 small onion diced
  • 2 cups chicken or beef broth
  • 2 teaspoons cumin
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh cilantro and lime for garnish optional

Instructions

  • Heat the olive oil in a large pot or deep skillet over medium heat. Add the diced onion and sauté for 3-4 minutes until softened.
  • Add the ground beef to the pot, breaking it up with a spoon. Cook until browned, about 5-6 minutes. Drain any excess fat if necessary.
  • Stir in the cumin, chili powder, and paprika, cooking for an additional minute until the spices become fragrant.
  • Add the diced red bell pepper, corn, and chopped tomatoes. Stir everything together until well combined.
  • Pour in the rice and broth, stirring to make sure the rice is evenly distributed.
  • Bring the mixture to a simmer, then cover the pot and reduce the heat to low. Cook for 18-20 minutes, or until the rice is tender and has absorbed the liquid.
  • Turn off the heat and let the casserole sit, covered, for an additional 5 minutes.
  • Fluff the rice with a fork and season with salt and pepper to taste.
  • Garnish with fresh cilantro and lime if desired. Serve warm, with sour cream or tortillas on the side if preferred.
