Ingredients

  • 1 whole chicken cut into pieces
  • 2 cups long-grain rice
  • 1 large onion finely chopped
  • 2 cloves garlic minced
  • 1 tsp cinnamon
  • 1 tsp allspice
  • ½ tsp cardamom
  • ¼ cup almonds toasted
  • ¼ cup pine nuts toasted
  • 4 cups chicken broth
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  • Prepare the Chicken – In a large pot, heat olive oil and sauté the onions and garlic until soft. Add the chicken pieces and brown them slightly before adding water and spices. Simmer until fully cooked.
  • Cook the Rice – Remove the chicken, strain the broth, and use it to cook the rice. Add the rice to the pot with the reserved broth, allowing it to absorb the rich flavors as it cooks.
  • Assemble and Serve – Shred the chicken and layer it over the rice. Garnish with toasted nuts and serve with yogurt sauce or salad.
