Ingredients

  • 2 tbsp olive oil
  • 3 garlic cloves minced
  • ½ tsp red pepper flakes adjust to taste
  • 1 cup crushed tomatoes
  • ¼ cup vodka
  • ½ cup heavy cream
  • Salt and pepper to taste
  • Cooked white rice for serving
  • Fresh parsley optional garnish

Instructions

  • Sauté garlic and pepper flakes – Heat olive oil in a large skillet over medium heat. Add minced garlic and red pepper flakes. Stir for 1–2 minutes until fragrant. Don’t walk away—garlic burns fast!
  • Deglaze with vodka – Pour in the vodka and let it sizzle for 2 minutes. This burns off the alcohol while infusing the sauce with depth. Stir constantly to pick up any garlic bits stuck to the pan.
  • Add crushed tomatoes and simmer – Add the tomatoes and a pinch of salt. Let it simmer for about 5 minutes to reduce slightly. This concentrates the flavor and thickens the sauce beautifully.
  • Add cream and shrimp – Stir in the heavy cream and then add the shrimp. Cook for 5–7 minutes, stirring occasionally, until shrimp are pink and cooked through. Don’t overcook or they’ll turn rubbery.
