The dish is a favorite morning treat often sold by street vendors in the Philippines. In this reimagined version, Taho Delight elevates the simplicity of traditional taho by layering it with rich custard and a hint of vanilla, creating a dessert that is both creamy and satisfying.

Ingredients

  • 2 cups silken tofu
  • 1 cup sago pearls cooked
  • 1 cup brown sugar
  • 1 cup water
  • 1 teaspoon vanilla extract
  • 1/2 cup evaporated milk optional
  • 1 tablespoon cornstarch optional for thickening

Instructions

  • Prepare the sago pearls: Begin by cooking the sago pearls. Bring a pot of water to a boil, then add the sago pearls. Stir occasionally to prevent sticking. Once the pearls are transparent with a small white dot in the center, drain them and rinse under cold water. Set aside.
  • Make the arnibal (sweet syrup): In a small saucepan, combine the brown sugar and water. Heat the mixture over medium heat, stirring until the sugar is completely dissolved. Let it simmer for a few minutes until it thickens slightly. If you prefer a thicker syrup, dissolve the cornstarch in a tablespoon of water and add it to the syrup, stirring until it thickens. Remove from heat and stir in the vanilla extract.
  • Prepare the silken tofu: While the arnibal is simmering, gently heat the silken tofu in a separate pan or steamer. The goal is to warm it through without breaking it apart. Once warm, carefully transfer the tofu to serving bowls or glasses.
  • Assemble the Taho Delight: Spoon the warm sago pearls over the tofu, then drizzle generously with the arnibal syrup. If desired, add a splash of evaporated milk for a richer flavor.
  • Serve: Serve immediately while the tofu is still warm. Taho Delight can be enjoyed as is, or chilled for a cooler version of the dessert.
