  • 200 g (7 oz) Yellow Squash
  • 100 g (3.5 oz )Breadcrumbs
  • 50 g (2 oz) Cheddar Cheese
  • 1 tsp Garlic Powder
  • ½ tsp Salt
  • ¼ tsp Pepper
  • 2 tbsp Olive Oil

Instructions

  • Preheat your oven to 400°F (200°C) or prepare a frying pan with about 2 tablespoons of olive oil. Grate the yellow squash and squeeze out excess moisture using a clean towel or paper towels. In a large bowl, combine grated squash, finely diced onion, beaten egg, breadcrumbs, shredded cheddar, garlic powder, salt, pepper, and chopped parsley. Mix well until cohesive.
  • Shape the mixture into small, flat tots or logs, about 1-2 inches in diameter. Place them on a baking sheet lined with parchment paper if baking, or directly into the hot olive oil if frying. Flatten slightly to ensure even crisping. For baking, spray lightly with olive oil for extra crunch.
  • Bake for 20-25 minutes until golden and crispy, flipping halfway through. If frying, cook in the hot oil for about 3-4 minutes per side until crispy, golden, and cooked through. Remove and drain on paper towels if frying. Serve warm, garnished with extra parsley for herby freshness!
