In another bowl, combine eggs, milk, vanilla, and melted butter. Stir until smooth, then pour the wet into the dry. Mix just until combined—lumps are okay!
Fold in crushed Biscoff cookies gently. Overmixing can make the waffles tough, so a quick stir will do. Meanwhile, heat your waffle iron.
Pour batter into the preheated waffle maker and cook until golden and crisp. Every waffle iron varies a bit, but around 4-5 minutes usually does the trick. Peek if needed!
